How to make it?

Boil

Combine the quince cubes with the sugar and water in a pot and bring to the boil.

Add the spices

Add the cinnamon stick and cloves and simmer, stirring, over low heat for 20 minutes.

Add the lemon juice

Add the lemon juice and cook for 5 more minutes.

Jar it

Remove the cinnamon stick and cloves and transfer to a jar.

Reminder

Getting the quince's pink colour takes time; don't rush it by raising the heat, or the colour will stay pale yellow.
