Iraqi cuisine's turmeric and cumin duo gives warm colour and depth to sea bass simmered in tomato sauce in this stew. Adding the fish last is the secret to it cooking through in the pressure cooker without falling apart.

How to make it?

Sauté the onion and garlic

Sauté the onion and garlic cloves in olive oil for 5 minutes.

Prepare the sauce

Add the tomato, cumin, paprika, turmeric and salt and cook for 5 more minutes.

Add the fish

Add the sea bass fillet and lemon juice, seal the pressure cooker lid, and once it reaches pressure, cook for 6 minutes.

Serve

5 min

Release the pressure and serve.

Reminder

Add the sea bass to the sauce last; adding it too early lets it break apart under high pressure and cloud the smooth sauce.

Levreği tarifteki sırayla en son ekledim, dört porsiyon dağılmadan çıktı ama zerdeçalın rengi beklediğimden daha koyu oldu, belki miktarını yarı yarıya azaltacağım bir dahaki sefere.

Levreği tarifteki gibi en son eklemek yerine baştan sosla birlikte koydum, dört porsiyonluk balık düdüklüde dağıldı ve sos pürüzsüz kalması gerekirken bulanıklaştı. Kendi hatamdı ama uyarıyı daha erken görmeliydim.
