An olive-oil pilav in which fresh or frozen broad beans meet rice and are freshened with dill. With its light yet filling nature, it is easily enjoyed both alongside main dishes and on its own.
Sauté the finely chopped onion in olive oil until pink.
Add the trimmed fava beans to the pot and sauté for about 5 minutes, then add the sugar and salt.
Add the drained rice and sauté for a few minutes, then add the hot water and, once boiling, cook over low heat until the water is absorbed.
Turn off the heat, place a paper towel over the rice, cover, and let it rest for 10 minutes. Add the dill and stir gently before serving.
Important: If you wash the rice and soak it in warm water for at least 15 minutes, the pilaf will have firmer grains. If using fava beans with their pods, boiling them briefly first and peeling the pods noticeably improves the flavor.
If you add the dill to the rice at the end and only stir it in during resting instead of cooking it, its green color stays more vivid.
