Sirnica, the Balkans' layered cheese pie, is filled here with kashkaval cheese and hot pepper flakes between sheets of thin filo. Rolling the layers evenly takes skill, resulting in a sliceable pie fit for a celebration table.

How to make it?

Prepare the filling

Mix the kashkaval cheese with two of the eggs, the pepper flakes and salt.

Prepare the liquid mix

Whisk the remaining egg with the milk and olive oil.

Layer the pie

Crumple the filo sheets and layer them into a baking dish, scattering the cheese filling between layers and drizzling with the liquid mix.

Bake

Bake in a preheated oven for 30 minutes until golden on top.

Reminder

Cover the filo sheets with a damp cloth as you work so they don't dry out; dried sheets crack and ruin the layers. Allergens: contains wheat (gluten), milk and dairy, egg.

Replacing half the kashkaval with white brined cheese gives the filling a saltier, more balanced flavour; in that case, skip adding extra salt.

Fırınımın altı güçlü olduğu için 30 dakika yerine 24 dakikada altın rengi aldı, sekiz dilimin kenarları biraz daha erken kontrol etmenizi öneririm, yoksa alt katmanlar fazla kararabilir.
