Balqabaq şirini, Azerbaijan's classic pumpkin dessert, softens in half an hour in a pressure cooker instead of the hours it takes in the oven. The pumpkin caramelizes with sugar and cinnamon and is served topped with chopped walnuts.

Step by Step

How to make it?

1

Prepare the pumpkin

10 min

Cut the peeled pumpkin into large cubes and place them in the pressure cooker, then add the sugar, cinnamon and water.

2

Cook under pressure

20 min

Seal the pressure cooker and bring to a boil over medium heat; once it whistles, lower the heat and cook for 20 minutes.

3

Release the pressure

10 min

Take the pot off the heat and let it release its own steam naturally, without forcing it open.

4

Serve

5 min

Transfer the pumpkin to a serving plate and sprinkle with chopped walnuts, serving it warm or cold.

Reminder

Never force the pressure cooker open — wait for the steam to release on its own, or you risk a hot-steam burn. Allergens: contains tree nuts (walnut).

Editor's Note Editörün Notu

Using toasted hazelnuts instead of walnuts gives the dessert a deeper roasted aroma.
