Barglar is a classic Uzbek dolma made by wrapping grape leaves around a spiced mince and rice filling and simmering them in lemony water. Since the flavour deepens once cooled, it is a frequent choice for picnic baskets and packed lunches.

How to make it?

Prepare the leaves

Blanch the grape leaves in boiling water for 2 minutes, then plunge into cold water.

Prepare the filling

10 min

Mix the minced meat, rice, chopped onion, grated tomato, mint, dill, salt and pepper to make the filling.

Roll

12 min

Place a teaspoon of filling on each leaf with the shiny side down, roll tightly and pack close together in a pot.

Simmer

20 min

Drizzle with lemon juice, olive oil and water, weigh down and simmer on low heat for 20 minutes; cool before packing for a picnic.

Reminder

Do not roll the parcels too loosely, as the rice swells during cooking and loose rolls will come undone. Without a weight on top, the rolls may fall apart while simmering.

Sarmaları piknik çantasında 3-4 saat taşımak lezzeti bozar mı, yoksa soğuduktan sonra sorun olmaz mı? Bende ikinci gün tadı daha da oturmuştu, sanırım limon suyu zamanla daha da belirginleşiyor.
