Put the fruit in a wide pot with the sugar and lemon juice and bring to a boil over medium heat. Cook for 15 minutes until the fruit breaks down and the mixture thickens.
If a drop on the edge of a plate holds its shape without running, the set is ready; if so, fill it into clean jars while still hot.
Stir the jam often while it boils, as this fruit tends to catch on the bottom of the pot; cooking over low heat prevents scorching.
If you can't find gooseberries, you can try the same amount of redcurrants; they also have a high pectin content and set in a similar time.
