Add the tomato paste and sauté for a few minutes, then add the carrots and potatoes and stir.
Add the peas, salt, black pepper and water, cover with the lid, and cook over low heat until all the vegetables are soft.
Once the vegetables are soft and the sauce has thickened slightly, remove from the heat and serve hot.
Important: If using frozen peas, there's no need to thaw them beforehand — you can add them straight to the cooking pot. Cut the carrots and potatoes into similar sizes so they soften in the same amount of time. The dish thickens as it cools; adjust the consistency with a few spoonfuls of hot water before serving if needed.
Sautéing the tomato paste briefly in oil brings out the dish's tomato aroma and gives a livelier color result; if you skip the tomato paste and add water directly, the dish stays paler and flatly sweet.
