Grill the corn and carrot
10 minGrill the husk-on corn and peeled carrot over the coals, turning occasionally, for 10 minutes until the outer husks are fully charred black.
Inspired by Argentina's asado grilling culture, this baby food is made by charring corn cobs over embers and blending the kernels into a fine purée. Strained twice to remove every skin and fibre, it makes a gentle first grain for babies from 8 months.
Grill the husk-on corn and peeled carrot over the coals, turning occasionally, for 10 minutes until the outer husks are fully charred black.
Peel away the charred husks, cut the kernels off the cob with a knife, and chop the carrot into small pieces.
Simmer the corn kernels and carrot pieces in a cup of water for 5 minutes until soft, then blend together with the olive oil.
Pass the purée through a fine sieve twice to make sure no skin or fibre remains.
Always pass the purée through a fine sieve before serving to your baby; even a tiny piece of skin is a choking risk. Do not add salt or sugar before the age of one.
Do not rush to take the corn off the fire — the full flavour only develops once the outer husks turn fully charcoal-black.
