A refreshing dessert from the Philippine islands, buko pandan is made by mixing young coconut strips with pandan-flavoured jelly cubes and cream, then chilling. Prepared ahead and served cold, it makes a sweet finish to a brunch spread.

How to make it?

Cook the jelly

Mix the pandan-flavoured water with the gelatine and bring to a boil.

Set the jelly

40 min

Pour the mixture into a shallow mould and chill for 40 minutes, until set.

Cube the jelly

5 min

Cut the set jelly into cubes.

Mix everything together

8 min

Combine the young coconut strips, jelly cubes, cream, sugar and condensed milk in a bowl.

Chill

20 min

Chill the mixture for at least 20 minutes before serving.

Reminder

Let the hot jelly mixture cool slightly before pouring it into the mould, or condensation will leave the surface uneven. Allergens: contains milk and dairy.
