This village-style soup, made by toasting fine bulgur with tomato and pepper paste and cooking it in water, is an economical choice prepared quickly with simple ingredients. It's finished with a red pepper flake butter sauce.

How to make it?

Sauté the onion and tomato paste

Soften the grated onion in olive oil, then add the tomato and pepper paste and sauté over low heat for a few minutes.

Add the bulgur and simmer

Add the water and bring to a boil, then add the bulgur and cook over low heat for 18 minutes until the bulgur is completely soft.

Serve with the sauce

Melt the butter, add the red pepper flakes and dried mint, sauté for a few seconds, then drizzle over the hot soup to serve.

Reminder

Important: Keep the heat low while toasting the tomato paste in oil to prevent burning — burnt paste gives the soup a bitter taste. Contains gluten (bulgur), so not suitable for celiac patients.

If you roast the tomato paste a little longer and add hot water on top, the soup's color becomes livelier and its flavor deeper; sprinkling a pinch of dried mint before serving completes the rustic village-style presentation.
