Walnut artichoke spread is a spiced Armenian meze made by mashing boiled artichoke hearts with walnuts, garlic and lemon juice into a smooth paste. The amount of chili makes it easy to adjust the spread's sharpness to personal taste.

Boil the artichoke

Boil the artichoke hearts for 15 minutes until tender, then drain.

Mash

Mash the boiled artichoke with the walnuts, garlic, lemon juice and chili until smooth.

Serve

Transfer the spread to a bowl and serve at room temperature or chilled.

Reminder

Drain the artichoke hearts well, or excess water will thin the spread. Add the chili gradually, tasting as you go. Allergens: contains nuts (walnuts).
