Chinese-style chili oil is a spiced condiment made by pouring hot oil infused with garlic and ginger over red pepper flakes, balanced with sesame and a touch of sugar. Since it keeps well in a jar, it is easy to pack for a lunchbox.

How to make it?

Prepare the base

Put the red pepper flakes, sesame and salt into a heatproof bowl.

Heat the oil

Put the vegetable oil, garlic and ginger in a pan and heat until it just starts to lightly smoke.

Pour the oil

Strain the hot oil away from the garlic and ginger and pour it slowly over the pepper flake mixture, stirring until the sizzle dies down.

Rest and jar

Stir in the sugar, transfer to a jar and let it rest at room temperature for at least 2 hours.

Reminder

Do not let the garlic and ginger burn while heating the oil, since scorched bits will make the sauce bitter and harsh. Place the bowl on a heatproof surface before pouring in the hot oil, as it can spatter during the sizzle. Allergens: contains sesame.

For a milder version, you can halve the amount of pepper flakes and make up the rest with sweet paprika; the colour stays the same but the heat drops noticeably.
