Cocadas are a Colombian street sweet made by briefly boiling shredded coconut with sugar and shaping it into small clusters. Entirely dairy-free and quick to make, they tend to disappear within minutes at a large gathering.

How to make it?

Boil the mixture

Boil the shredded coconut with the sugar, water, lemon juice and salt over medium heat, stirring constantly, for 10 minutes until it thickens and starts to hold together.

Shape

5 min

With wet hands, shape the hot mixture into small clusters and arrange on a lined tray.

Cool and serve

20 min

Let cool at room temperature for at least 20 minutes until they hold their shape, then serve.

Reminder

Stir constantly, or the mixture will catch on the bottom of the pot. It is still hot when you shape it, so keep your hands wet while working. Allergens: this recipe contains none of the main allergen groups.
