Created in 1953 for a royal celebration, coronation chicken is poached chicken folded into a curried mayonnaise dressing and piled into sandwiches for a crowd. Apricot and almond bring a mellow sweetness, making it one of the best-loved sandwiches of British buffet culture.

How to make it?

Poach the chicken

Simmer the chicken breast with the bay leaves for 15 minutes, then remove, cool and shred it by hand.

Mix the sauce

10 min

Stir together the mayonnaise, curry powder, apricot, almonds, lemon juice and salt in a bowl, then fold in the shredded chicken.

Chill

60 min

Chill the mixture for at least 1 hour so the flavours can meld.

Assemble

5 min

Spread a generous layer of the chicken mixture between the bread slices, cut into triangles and arrange on a platter.

Reminder

Chill the sauce for at least 1 hour before using; the flavours need this time to come together. Allergens: contains egg and tree nuts (almond).

Bademi bulamadığım için ceviz kullandım, tat gerçekten daha yoğun ve hafif buruk oldu ama karışımın kıvamını bozmadı. Kayısıyı biraz azaltıp cevizle dengeledim, sandviç yine de kalabalık sofrada hızla bitti.
