Mountain pepper ice cream is a sweet-and-spicy dessert made by stirring Australia's native mountain pepper into a cream-based mixture. The pepper's heat doesn't hit on the first bite — it builds a few seconds later. Needing only a handful of ingredients, it's a cheap dessert that still draws attention at the table.
Whip the chilled cream until it holds stiff peaks.
Gently fold the condensed milk, mountain pepper and vanilla into the whipped cream.
Pour the mixture into a lidded container, cover and freeze for at least 6 hours.
Take it out of the freezer 5 minutes before serving to soften slightly, then scoop into bowls.
Add the mountain pepper gradually and taste as you go; because the heat is delayed, adding too much only becomes obvious later. Allergens: contains milk and dairy (cream, condensed milk).
If you can't find mountain pepper, a small amount of freshly ground black pepper works as a substitute, though the heat hits sharper and more immediately.
