Beef bacon and egg pie is a classic New Zealand roadside breakfast made by cracking beef bacon and whole eggs into puff pastry and baking it. Leaving the yolks slightly runny is what gives the pie its signature look once sliced. Since it freezes well in slices, it makes for a quick breakfast fix on weekday mornings.

How to make it?

Line the tin

Line the base and sides of a round tin with part of the puff pastry.

Fill the pie

Scatter the chopped beef bacon and spring onion over the pastry, then add the grated kaşar cheese.

Crack in the eggs

Crack the eggs evenly over the filling, season with salt and pepper, then cover with the remaining pastry and seal the edges tightly.

Bake

Bake the pie in the preheated oven until golden on top, then let it rest for 10 minutes before slicing.

Reminder

Don't break the yolks while cracking in the eggs; a runny yolk gives the pie its signature look once sliced. Allergens: contains gluten (puff pastry), egg and milk and dairy (butter in the pastry).
