Mix the dried apricots, pine nuts, parsley, and crushed garlic.
Lay the thinly pounded meat flat on a surface, spread the filling over it, roll it up tightly, and tie it with kitchen twine.
Sear the roll in a wide pan with olive oil until browned on all sides.
Place the roll on a baking tray and bake in a preheated oven until it reaches the desired doneness.
Remove the roll from the oven and be sure to let it rest for a few minutes, then untie the twine, slice, and serve hot.
Important: If you don't tie the roll tightly, the filling may leak out during cooking. Allergen: contains nuts (peanuts). Caution: Be sure to let it rest for a few minutes before slicing, otherwise the filling falls apart.
If you prepare the roulade the night before cooking and let it rest in the fridge, it will hold its shape better when sliced.
