A shapely egg dish from Japanese New Year spreads, datemaki is made by baking a sweet egg mixture blended with white fish fillet in the air fryer, then rolling it tightly while still warm. Once cooled, it's sliced to show off its spiral cross-section.

Pour the mixture into a greased, air-fryer-safe square tin and cook at 170°C for 14-16 minutes until the surface sets firm. Without an air fryer, cook for the same time in a preheated oven.
Turn the baked mixture out of the tin onto a bamboo mat, roll it up tightly while still warm, and secure the ends with a rubber band.
Let it cool completely while still rolled, remove the band, and slice it with a sharp knife to serve.
Roll the egg mixture up tightly on a bamboo mat the moment it comes out of the air fryer, while still warm; if it cools first, it will crack when you try to roll it. Allergens: contains egg and fish.
