Saudi pressure-cooked egg jareesh is a hearty dish made by cooking cracked wheat quickly in a pressure cooker and finishing with a cracked egg on top. Soaking the wheat overnight beforehand is what shortens the pressure-cooking time.
Cook the soaked cracked wheat with the butter and salt in a pressure cooker over medium heat for 12 minutes.
After releasing the pressure, crack the eggs on top of the wheat and cook uncovered for another 3 minutes.
Serve the jareesh hot.
Soak the wheat in water the night before, or unsoaked wheat will take too long to soften in the pressure cooker. Add the egg last and avoid over-stirring. Allergens: contains gluten (cracked wheat), egg, milk and dairy (butter).
Adding a pinch of cumin before serving brings the dish closer to the classic Saudi aroma.
