Hearty vegan tomato rice pilaf, colored with tomatoes and tomato paste, cooked grain by grain. With its slightly sweet-sour taste and appetizing color, it's a practical pilaf perfectly suited to everyday tables and side dishes.

How to make it?

Prepare the rice

Rinse the rice in lukewarm water until the water runs clear, then drain.

Sauté the tomato paste and tomatoes

Heat the vegetable oil and briefly sauté the tomato paste, then add the grated tomato and cook until the liquid evaporates. Add the drained rice and sauté for a few minutes.

Add the water and cook

Add the hot water, sugar and salt; once it boils, reduce the heat, cover with a lid, and cook until the liquid is absorbed.

Let it steep

10 min

Turn off the heat, cover the lid with a clean cloth, and let it steam for 10 minutes. Fluff with a fork and serve.

Reminder

Important: For tomato rice dishes to have separate, fluffy grains, the tomato's liquid needs to cook off fully before adding the water. Contains gluten. Keeps in the fridge for a few days; sprinkle with water and reheat over low heat.
