Soak the chickpeas

One of Anatolia's heartiest home-style rice dishes, chickpea and beef pilav is made by slow-simmering overnight-soaked chickpeas and diced beef before adding the rice. It keeps its flavour cold, making it just as good packed in a lunchbox as it is served at a hearty breakfast spread.
Soak the dried chickpeas in plenty of water overnight, then drain.
Brown the diced beef and onion in the butter for 15 minutes until the meat changes colour.
Add the soaked chickpeas and hot water, cover and simmer for 60 minutes until both the chickpeas and meat are tender.
Add the rinsed rice, salt and black pepper, then simmer over low heat for 15 minutes until the liquid is absorbed.
Remove from the heat, cover the pot with a paper towel and the lid, and let it rest for 10 minutes.
Skip soaking the chickpeas overnight and they will take much longer to cook, possibly not softening in time with the rice, so do not leave this step out. Allergens: contains milk and dairy (butter).
Use cooked tinned chickpeas instead of dried and you can skip the soaking and long simmering steps; in that case, add the chickpeas together with the meat in the last 15 minutes.
