Open the lid, stir in the erythritol and cook uncovered over medium heat for another 10 minutes, stirring, until it thickens.

Reminder

Always let the pressure cooker release its pressure naturally; forcing it open strains the lid and can splash hot fruit liquid. If the texture still seems runny, you can extend the final step by a few minutes.
