One of the most loved offal dishes in Armenian cooking, this sauté is made by quickly pan-frying thinly sliced lamb liver with cumin and garlic, then finishing it with fresh mint. Cooking it briefly over high heat keeps the liver tender without overcooking it.

How to make it?

Prepare the liver

Rinse the liver slices and pat them dry with paper towel.

Sauté the onion

Sauté the onion in olive oil until it turns translucent.

Cook the liver

Add the liver slices and cook over high heat for 6 minutes, tossing with the cumin, garlic, salt and black pepper.

Finish with mint

2 min

Remove from the heat, sprinkle over the fresh mint and serve.

Reminder

Cook the liver briefly over high heat — overcooking will make it tough.

Ciğeri 6 dakika yerine 4 dakikada aldım, dışı hafif pembemsi kaldı ama biz öyle sevdik. Naneyi de pişirirken ekleyip biraz kavurdum, tazeliği azaldı ama aroması tüm sosa yayıldı.
