A labour of love from Erzurum's tables, this manti is made by cutting thinly rolled dough into small squares and filling them with spiced minced beef. Finished with garlicky yoghurt and melted butter, the presentation is what sets this manti apart from other regional versions.
Knead the flour, egg, water and salt into an elastic dough.
Wrap the dough and let it rest at room temperature for 10 minutes.
Mix the minced beef with the onion and black pepper.
Roll the dough thin and cut into small squares, place a little filling in the centre of each and seal.
Boil in salted water for 10 minutes, then drain.
Mix the garlic cloves into the yoghurt and spoon it over the dumplings, then drizzle with melted butter and pepper flakes before serving.
Always let the dough rest before rolling it; unrested dough isn't elastic and tears while sealing. Allergens: contains wheat (gluten), egg, and milk and dairy.
The smaller you cut the squares, the shorter the cooking time but the longer the folding takes; if you're short on time, I'd suggest cutting slightly larger squares.
