Made from Ethiopia's berbere spice blend, awaze is a thick dipping sauce prepared without any cooking. Served alongside bread or grilled meats, it also travels easily in a picnic basket.

How to make it?

Mix

Mix the berbere spice with the olive oil, water, crushed garlic and salt for 5 minutes until it forms a smooth paste.

Rest

10 min

Let the sauce rest for 10 minutes to let the flavours settle.

Serve

2 min

Give the rested sauce one more stir, transfer to a small bowl and serve.

Reminder

Add the berbere spice a little at a time, tasting as you go — the mixture can turn very spicy quickly. Stir once more after resting, this brings up the spice that settles at the bottom. Allergens: none.
