Chard leaves are rolled around a ground beef and rice filling and simmered gently, giving a tangier, lighter alternative to the usual cabbage or vine leaf wraps. With a modest amount of rice, it makes a filling main course that suits portion control.

Blanch the chard leaves in boiling water for 1-2 minutes, then drain and trim off the stems.
Place a teaspoon of filling in the centre of each leaf, glossy side down, roll tightly and pack the rolls snugly into a pot.
Drizzle over the olive oil, add the hot water and simmer covered over low heat for 45 minutes. Let it cool slightly and serve with a squeeze of lemon juice.
Do not over-blanch the chard leaves; they only need to soften enough to bend, or they will tear while rolling. You can freeze the uncooked rolls in a single layer and simply add 10 minutes to the simmering time when you cook them.
