Rellenos de plátano is a hearty Cuban snack made by wrapping leftover spiced beef in ripe plantain dough and frying until golden. Shaping the dough without tearing it takes real skill, so it helps to test a piece or two before frying the rest.

Prepare the plantain dough

Mash the boiled plantains and mix with the cornflour and salt to form a smooth dough.

Prepare the filling

Warm the leftover spiced beef with the onion and tomato paste in a pan for 5 minutes until thickened; if you have no leftovers, brown fresh ground beef the same way for 15 minutes.

Fill and shape

With wet hands, take a handful of plantain dough, place the filling in the centre, close it up and shape into an oval. Repeat with the remaining dough.

Fry

10 min

Heat the oil over medium heat and fry the fritters, turning, for 10 minutes until golden on every side.

Reminder

Shape the plantain dough with wet hands, or it will stick and tear. Watch the oil temperature; if it is too hot the outside browns fast while the inside stays raw. Allergens: this recipe contains none of the main allergen groups.
