Dried shrimp and scallop are quickly softened in a pressure cooker, then fried in garlicky oil in this Chinese sauce, giving a shortcut through the usual hours-long drying process. It is spooned over congee at breakfast or over noodles as a late-night snack.

How to make it?

Soften the seafood

Put the dried shrimp and scallop in the pressure cooker with a little water, seal it and cook for 5 minutes once it comes to pressure; drain and finely chop.

Fry the aromatics

10 min

Fry the garlic and shallots in the oil until golden.

Combine

15 min

Add the chopped seafood, pepper flakes, soy sauce and sugar, then cook over low heat for 15 minutes, stirring, until the oil separates and it thickens.

Cool and jar

10 min

Let the sauce cool to room temperature, then transfer it to a jar.

Reminder

Use only a little water when softening the seafood in the pressure cooker; too much waters down the flavour. Stir the sauce constantly as it cooks — if it catches on the bottom it turns bitter. Allergens: contains shellfish, soy.

Deniz ürünlerini düdüklü tencerede yumuşatırken suyu fazla koydum, süzerken neredeyse hepsi sulanıp dağıldı. Kıyma aşamasında elimde pek bir şey kalmamıştı, bir dahaki sefere daha az su kullanacağım.

Kurutulmuş deniz tarağı bulamadığım için sadece kurutulmuş karidesle yapılabilir mi, yoksa tat dengesi çok mu bozulur? Ayrıca 15 dakikalık pişirme süresi biraz kısa geldi, uzatabilir miyim?
