Fatayer, one of the beloved pastries of Jordanian cuisine, is prepared by wrapping a sumac-spiced spinach filling in thin yeasted dough and folding it into a triangle. With its slightly tangy taste and soft texture, it's an essential flavor for breakfast and afternoon tea tables.
Dissolve the yeast and sugar in lukewarm water, then knead with flour, olive oil and salt into a smooth dough. Cover and let rest until risen.
Rub the chopped spinach with salt and let it sit for a few minutes, then squeeze out the excess water by hand. Mix with onion, sumac, olive oil and lemon juice.
Roll the dough into small rounds, place the spinach filling in the center and fold the three corners toward the middle to close into a triangle; press the corners firmly.
Bake in a preheated oven until golden. Serve hot or warm.
Important: Rub the spinach with salt and be sure to squeeze out excess liquid, otherwise the filling will become watery and the dough will open easily while folding it into a triangle. Press the sealed corners firmly with your fingertips, otherwise the filling may leak out while cooking. Allergen: contains wheat (gluten).
You can use a bit more lemon juice instead of sumac; adding a few drops of pomegranate molasses to the spinach nicely balances the sourness.
