Feijoa is peeled and simmered slowly with sugar to make this preserve, tied to the autumn harvest of New Zealand gardens. The fruit's distinctive floral aroma fills the kitchen as it simmers.

Step by Step

How to make it?

1

Prepare the Feijoa

15 min

Peel the feijoa fruit and cut it into cubes.

2

Bring to the Boil with Sugar

5 min

Combine the chopped feijoa with the sugar and lemon juice in a wide pot and bring to the boil.

3

Simmer Slowly

50 min

Simmer over low heat, stirring often, for 50 minutes until thickened.

4

Jar the Preserve

10 min

Fill sterile jars with the hot jam and cool them upside down.

Reminder

Scrape the bottom of the pot often while it simmers, or the sugar can catch and burn. Cooling the jars upside down helps the lids seal tightly.

Editor's Note Editörün Notu

Since feijoa season is short, it makes sense to preserve a large batch while it is plentiful; tightly sealed jars keep for months in a cool cupboard.
