Filfel chuma is a simple, sharp Tunisian condiment made by pounding garlic with cumin, olive oil and lemon. It comes together in minutes to serve alongside leftovers or grilled meat.

How to make it?

Pound the garlic

Pound the peeled garlic with the salt in a mortar for 5 minutes until you have a smooth paste.

Mix it together

Add the cumin, olive oil and lemon juice and mix well.

Prepare for serving

Spoon the paste into a small bowl and drizzle a little extra olive oil over the top.

Reminder

Pounding the garlic with the salt in a mortar softens its sharpness and gives a smoother paste. Making the sauce at least 10 minutes before serving lets the flavours meld together better.
