Made to use up overripe, leftover bananas, this Filipino sauce is simmered with vinegar, sugar and spices until thick. Getting the texture right takes patience, and it is a classic accompaniment for barbecues and picnics.

Simmer the banana purée with the water, vinegar, tomato paste, sugar, salt, cinnamon and cloves in a pot over low heat, stirring, for 25 minutes.
Strain the mixture to remove the fibrous bits, return it to the heat and simmer for 10 more minutes until it reaches the desired thickness; this step is tricky, since the sauce can easily catch on the bottom.
Pour the hot sauce into a clean bottle and leave it to cool.
Keep stirring the sauce constantly while it thickens; if it catches on the bottom, the burnt flavour spreads through the whole batch.
Using less tomato paste and an extra spoon of banana instead makes the sauce sweeter and less acidic.
