Toast the hazelnuts

A type of pilaf with a crunchy texture and distinctive aroma, in which the Black Sea's abundant hazelnuts are browned in butter and added to rice pilaf. A practical alternative that makes ordinary pilaf stand out at guest tables.
Melt half of the butter in a pot and lightly toast the crushed hazelnuts until golden, then set aside.
Add the remaining butter and sauté the rinsed rice for 2-3 minutes.
Add the hot water and salt and bring to a boil; cook over low heat with the lid closed until the water is absorbed.
Remove from heat, stir in most of the toasted hazelnuts, cover and let rest for 8-10 minutes.
Important: Sauté the hazelnuts in butter briefly — sautéing them too long can make them turn bitter. Allergen: contains nuts (hazelnut), should not be served to those with a hazelnut allergy.
If you roughly crack some of the hazelnuts and sprinkle the rest on top at serving time, you get crunch both inside and on top of the pilaf.
