Mix olive oil, lemon juice, crushed garlic, thyme, salt, and black pepper, and rub it all over the chicken, reaching under the skin as well.
Place the chicken on a baking tray and cook in a preheated oven at 190 degrees.
In the last ten minutes, raise the oven temperature slightly to let the skin brown nicely, then rest for a few minutes before serving.
Important: taking the chicken out of the oven without checking its internal temperature carries a risk of undercooking; check from the thickest part of the thigh. Note: be sure to bring the chicken to room temperature before cooking, otherwise the outside may burn while the inside stays raw.
If you also rub a bit of the spice mix under the chicken's skin, the flavor sinks in deeper and the skin crisps up better. Potato slices added to the tray get flavored by the chicken's juices.
