A colorful snack made by mixing boiled rice with grated carrot and zucchini and baking it in small balls. This recipe, which can also be used to make use of leftover rice, is a practical option for a lunch box.

How to make it?

Mix the filling

Mix the cooled rice, grated carrot and zucchini, egg, white cheese, and dill together in a bowl.

Shape into balls

Take small portions of the mixture, shape into round balls, coat with breadcrumbs, and arrange on a baking tray lined with parchment paper.

Bake

20 min

Bake the balls in a preheated 200-degree oven, turning halfway through, until each side turns lightly golden.

Reminder

Allergen: contains egg, dairy products and wheat (gluten). Important: if you try to shape the rice into balls before it cools, it may fall apart in your hands; let the mixture cool down first. Caution: the inside of the balls coming out of the oven may stay hotter than the outside.
