This pudding turns the classic Indian mango lassi into a no-cook breakfast and party treat by folding in chia seeds. As it chills, the chia seeds swell and give the pudding a velvety texture.

Step by Step

How to make it?

1

Purée the mango

3 min

Blend the ripe mango until smooth.

2

Make the lassi base

4 min

Whisk the mango purée with the yoghurt, honey and cardamom into a smooth lassi-like base.

3

Stir in the chia seeds

180 min

Stir the chia seeds into the mixture until evenly distributed, divide into glasses and chill for at least 3 hours.

4

Serve

3 min

Remove the pudding from the fridge, give it one more stir, and serve garnished with diced mango if you like.

Reminder

Give the mixture one more stir about 10 minutes after adding the chia seeds, or they will sink and clump at the bottom. Allergens: contains milk and dairy.
