Place the torik fillets in a large dish and rub with olive oil, lemon juice and zest, crushed garlic, thyme, salt and pepper.
Cover the dish and let it marinate in the fridge for 60 minutes, which allows the fish to absorb the flavours.
Halve the artichoke hearts and toss with olive oil, having briefly soaked the cut surfaces in lemon water so they don't discolour.
Arrange the artichokes around the fish on the tray and bake in an oven preheated to 190°C for 30 minutes, until the fish flakes easily.
Take the fish out of the fridge at least 45 minutes before baking so it reaches room temperature; cold fish bakes unevenly. As you trim the artichokes, drop the cut pieces straight into lemon water so they don't discolour.
The thicker the fillet, the longer it needs in the oven; a thinner cut may be ready a few minutes before the 30-minute mark, so check with a fork. Out of season, frozen artichoke hearts work just as well.
