Made with butter, eggs and lemon zest, this classic French treat is baked in a ridged, shell-patterned tin so the edges puff slightly. It freezes well, making it a good option for a late-night snack too.

How to make it?

Whisk the batter

Whisk the eggs and sugar together until pale and voluminous.

Fold in the dry ingredients

Sift in the flour and baking powder, then fold in the melted butter, lemon zest and vanilla gently.

Chill the batter

30 min

Cover the batter and chill it for 30 minutes; this rest is what allows the cakes' signature hump to form.

Bake

12 min

Fill the moulds and bake in an oven preheated to 200°C until the edges turn golden.

Reminder

If you skip chilling the batter the cakes stay flat and never develop their signature hump; be sure to rest it for 30 minutes. Allergens: contains wheat (gluten), egg and dairy (butter).

Using orange zest instead of lemon makes the flavour sweeter and softer; reduce the sugar by one spoon in that case to keep the balance.
