Cook the custard
12 minHeat the milk, add the semolina and half a cup of sugar, and cook, stirring constantly, for 12 minutes until thickened.
A masterful Greek dessert, galaktoboureko is made by filling a semolina-thickened custard between crisp filo sheets, baking it, and finishing with a lemon syrup. Getting the custard's consistency exactly right is the trickiest part of the recipe.
Heat the milk, add the semolina and half a cup of sugar, and cook, stirring constantly, for 12 minutes until thickened.
Off the heat, gradually whisk the beaten eggs and vanilla into the custard.
Layer half the filo sheets in a baking dish, brushing each with butter, pour the custard over, then cover with the remaining buttered sheets.
Score the top into diamond shapes and bake in an oven preheated to 180°C for 35 minutes until golden.
Boil the remaining sugar with the lemon juice and water, let it cool slightly, then pour it over the hot pastry.
Pour warm syrup over the hot pastry rather than a cold one; if both are hot or both are cold, the syrup won't absorb properly. Allergens: contains wheat (gluten), milk and dairy (milk, butter), egg.
If you don't stir the custard constantly while it cooks, it will catch at the bottom and leave a grainy texture.
