Proof the dough

Dissolve the fresh yeast in the lukewarm water with the sugar and let it foam for 10 minutes. Add the salt to the flour, then mix in the yeast mixture to form a runny, custard-like batter; cover and let it rise in a warm spot for 45 minutes.

Make the syrup

Boil the sugar, water and lemon juice, then simmer over low heat for 8 minutes until slightly thickened, and set aside.

Fry

Heat the oil over medium heat and drop spoonfuls of the batter into the hot oil, frying for 6 minutes until golden on every side.

Dip in the syrup

Lift the fried dough balls out with a slotted spoon and dip them straight into the hot syrup, holding for a few seconds before transferring to a serving plate.
Reminder
Watch the oil temperature; if it is too hot the outside browns fast while the inside stays raw. Drop the dough balls into the hot syrup as soon as they are fried, since they absorb it poorly once cooled. Allergens: contains gluten (wheat flour).
