Geelrys is a lightly sweetened yellow rice from South Africa's Cape Malay cooking, its brown rice coloured with turmeric and cinnamon and studded with raisins. Using whole-grain brown rice and cooking it with oil alone builds a breakfast dish that is both whole-grain and dairy-free.

Step by Step

How to make it?

1

Toast the rice

3 min

Bloom the turmeric and cinnamon in the oil for 1 minute, then add the rinsed brown rice and stir.

2

Cook

25 min

Add the water, salt and brown sugar, and once it boils, simmer covered over low heat for 25 minutes.

3

Steam

10 min

Stir in the raisins, remove from the heat, and let it steam covered for 10 minutes.

4

Serve

2 min

Fluff with a fork and serve hot.

Reminder

Brown rice takes longer to cook than white rice, do not take it off the heat just because the water has been absorbed, the grains may still be firm.

Kuru üzüm yerine kuru kayısı doğrayıp kullandım, tatlılığı biraz daha az oldu ama ekşimsi bir ton kattı ve çocuklarım normalde üzümü ayıklarken bunu ayıklamadan yediler.
