Gümüş balığı tava is a simple, quick breakfast fish dish from the Black Sea coast, made by coating small silver fish in flour and cornmeal before frying. It comes out crisp outside and tender inside, served with lemon wedges.

How to make it?

Prepare the fish

Wash the silver fish and pat them dry with paper towel, then season with salt and black pepper.

Coat the fish

Beat the egg, then coat the fish first in flour, then in the beaten egg, and finally in cornmeal.

Fry the fish

15 min

Heat the vegetable oil in a pan and fry the fish for 15 minutes, turning until both sides are golden. Drain on paper towel and serve with lemon slices.

Reminder

Season the fish just before frying — salting it too early draws out moisture and stops it crisping. Allergens: contains wheat (gluten), egg and fish.

If you use breadcrumbs instead of cornmeal, the coating will be thicker and crunchier; shorten the frying time by a minute or two in that case.

Balıkları biraz büyük seçmiştim, 15 dakikalık kızartma yetmedi ve ortası hamur kaldı; ikinci seferde daha küçük boy alıp 10 dakikada bitirdim. Mısır ununu kalın bulduğum için yarı yarıya galeta unuyla karıştırdım.
