Cold-soaked bulgur meets fresh vegetables and a walnut bazha sauce in this salad, one of Georgian cuisine's summer classics made without ever lighting the stove. Getting the walnut sauce smooth without its oil separating from the liquid takes a careful balancing act.

Step by Step

How to make it?

1

Soak the bulgur

60 min

Cover the fine bulgur with cold water in a bowl and let it sit for 60 minutes, until the grains soften enough to chew.

2

Chop the vegetables

15 min

Dice the tomato, cucumber and red pepper, and finely chop the mint.

3

Make the walnut bazha sauce

15 min

Pound the walnut with the garlic in a mortar into a paste, add the pomegranate molasses and olive oil, then whisk in the water a little at a time until smooth.

4

Toss and serve

10 min

Toss the soaked bulgur with the vegetables, drizzle over the walnut sauce, season with salt and serve.

Reminder

Add the water to the walnut sauce a little at a time; pouring it in too fast can make the oil separate and leave a grainy texture. Allergens: contains wheat (gluten, from the bulgur) and tree nuts (walnut).
