Cold-soaked bulgur meets fresh vegetables and a walnut bazha sauce in this salad, one of Georgian cuisine's summer classics made without ever lighting the stove. Getting the walnut sauce smooth without its oil separating from the liquid takes a careful balancing act.

Dice the tomato, cucumber and red pepper, and finely chop the mint.
Pound the walnut with the garlic in a mortar into a paste, add the pomegranate molasses and olive oil, then whisk in the water a little at a time until smooth.
Toss the soaked bulgur with the vegetables, drizzle over the walnut sauce, season with salt and serve.
