Tunisian breakfast tables' spicy harissa tradition is made by melting down red pepper and tomato in a pressure cooker, then cracking eggs on top. Cooking the eggs with the lid off keeps the yolks runny.

How to make it?

Prepare the vegetables

Put the red pepper and tomato in the pressure cooker with the olive oil, and add the garlic cloves, harissa, cumin and salt.

Seal the lid, and once it reaches pressure, cook for 6 minutes.

Add the eggs

Release the pressure, crack the eggs on top, and cook uncovered over low heat for 8 minutes.

Serve

Serve hot.

Reminder

Cook the eggs with the lid off after cracking them in; cooking covered hardens the yolks. The pepper and tomato base can be frozen without the eggs. Allergens: contains egg.
