One of the foundational sauces of South Indian cooking, this sauce is made by combining coconut milk with mustard seed, coriander and curry leaf bloomed in hot oil. Its body comes purely from the fat in the coconut milk itself, which keeps it ketogenic and low-carb friendly.
Heat the coconut oil and add the mustard seeds; once they start to crackle, add the curry leaf and dried red chilli.
Add the garlic and turmeric and cook for another 2 minutes.
Add the coconut milk and salt, and simmer over low heat for 35 minutes, stirring occasionally, until the sauce thickens.
Remove from the heat, stir in the fresh coriander, and serve.
Use a lid when you add the mustard seeds to the hot oil, they pop and can spatter. Allergens: coconut is not a shellfish product, but those with tree nut sensitivities should still take care.
