Made by cooking grated coconut with a melted sweetener until caramelized, then shaping it into small balls, this Filipino treat is a classic hand-held party sweet. Using a sweetener instead of sugar keeps it low in carbohydrates.

How to make it?

Make the caramel

Melt the butter in a wide pan and stir in the sweetener, cooking for 10 minutes while stirring constantly until it melts and thickens.

Add the coconut

35 min

Add the grated coconut and salt to the pan and cook over low heat for 35 minutes, stirring constantly until the mixture turns sticky and deep in colour; do not leave the stove, as it can burn quickly.

Shape the candy

10 min

Spread the hot mixture on a tray and let it cool slightly, then lightly oil your hands and shape it into small balls.

Let it set

25 min

Leave the shaped balls at room temperature for at least 25 minutes until they firm up.

Reminder

Cook the mixture over low heat and stir constantly, or it will catch and burn on the bottom. Allergens: contains milk and dairy.

Tarifte 35 dakika yazıyor ama benim tavamda karışım 45 dakikada koyulaştı, muhtemelen tavamın tabanı ince olduğu için ısı daha yavaş işledi. Yine de sonuç lezzetliydi.
