This breakfast plate brings together a chickpea spread, fresh vegetables and olive oil the way Lebanese households commonly serve the first meal of the day. With no cooking required, it offers a light, low-calorie yet filling start to the morning.

Step by Step

How to make it?

1

Blend the chickpeas

8 min

Blend the cooked chickpeas with the garlic, tahini and lemon juice in a food processor, adding water a little at a time until smooth.

2

Season

3 min

Add the cumin and salt to the blended chickpea mixture and pulse once more, adjusting the lemon juice to taste.

3

Plate

3 min

Spread the chickpea spread on a wide plate and use the back of a spoon to make a well in the centre, then drizzle with olive oil.

4

Serve with vegetables

3 min

Arrange the sliced cucumber and quartered tomatoes around the edge of the plate and serve warm or at room temperature.

Reminder

Add the water to the chickpeas a little at a time while blending; too much at once will thin the hummus out and make it spread on the plate. Allergens: contains sesame.
