Red lentils are simmered with carrot and potato, seasoned with turmeric and cumin, and blended smooth in this everyday soup from Iraqi kitchens. Since most of the ingredients are pantry staples, it makes for a budget-friendly evening meal.

How to make it?

Cook the vegetables

Cook the onion, carrot and potato in the olive oil until softened.

Add the spices

Add the turmeric, cumin and tomato paste and cook for 2 minutes.

Cook the lentils

40 min

Add the rinsed red lentils and the hot water, then simmer over low heat for 40 minutes until the lentils are completely soft.

Blend and serve

8 min

Blend the soup until smooth, season with salt, black pepper and lemon juice, and serve.

Reminder

Rinse and drain the lentils before adding them, or the soup will turn cloudy. If the soup is still hot when you blend it, leave the lid slightly ajar to let steam escape, or it can pop off.
