One of the most elegant seafood soups, lobster soup is made by softening vegetables in butter, simmering them with tomato paste and fish stock, and finishing with lobster meat and cream. Served as a starter at dinner parties, it is ideal for special occasions.
Sauté the onion, carrot and celery in the butter until softened.
Add the tomato paste and flour and cook for 5 minutes until the raw flour smell is gone.
Add the fish stock and bring to a boil, then simmer over low heat for 30 minutes so the vegetables release their flavour.
Pass the soup through a sieve to remove the vegetable pieces, then blend the liquid until smooth.
Add the chopped lobster meat and cream, warming gently over low heat for 10 minutes without boiling, then season with salt and pepper and serve with dill.
If the soup is at a rolling boil when you add the cream, it can split, so pull it off direct heat first. If you do not cook the flour with the tomato paste long enough, the soup keeps a raw, floury taste. Allergens: contains shellfish, milk and dairy, and wheat (gluten).
If you cannot find lobster, you can turn this into a soup made with shrimp shells using the same method; the flavour will be lighter, but the structure stays the same.
